There are three types of minerals in Stardew Valley: forageable minerals, gems, and geode minerals.
Players can get forageable minerals from the Mines and Skull Cavern. These are the minerals that you can pick up without having to use a pickaxe. Here are all the forageable minerals in Stardew Valley:

Gems are usually special minerals that are generally loved or liked as gifts, are often used as ingredients in crafting recipes, and can be looted from gems nodes. These are all the gem minerals in Stardew Valley:

What to Do with Minerals in Stardew Valley
There are quite a few things you can do with minerals in Stardew Valley. Depending on what mineral you got, you will have different choices:
Give It To The Museum
All minerals will have a description that says you should give it to Gunther at the Museum. Since you can get quite a lot of rewards from the Museum and also unlock the Sewers, you should give all of the minerals to the Museum at least once.
Unless it is the Prismatic Shard, which you should first use to get the Galaxy Sword. Afterward, you could deposit it in the Museum as well.
Keep Them For Gifting and Trading
There are a couple of minerals that you should always deposit in a chest in case you will need to gift it or trade it in the Desert.
You must always keep the Amethyst, Aquamarine, Diamond, Emerald, Jade, Prismatic Shard, Ruby, and Topaz minerals in a chest if you want to gift them to NPCs or trade them for resources at the Desert Trader.
Use Them For Crafting
Some of the minerals in Stardew Valley can also be used in crafting recipes. The Diamond, Fire Quartz, Earth Crystal, and Quartz are needed for quite a few items.
You will need Diamonds for the Geode Crusher. This machine will break down Geodes for you in exchange for Coal. Earth Crystals can be used to make the Mayonnaise Machine.
The Fire Quartz and the standard Quartz can both be used to make Refined Quartz. This material is used in a lot of crafting recipes, including Solar Panels and Lighting Rods.
Sell Them
If the mineral doesn’t meet any of the uses from above, you can directly sell them. Even the minerals from above don’t need stacks larger than 999.
So, if you have 999 Diamonds, you can start selling them every time you get over the limit since you won’t need any more than that.
This means that for most minerals, you should give them at the Museum and then sell them every time you get them.
